The perfect snack if you are detoxing or just watching what you eat. These delicious raw energy bars combine healthy fats from nuts and seeds and antioxidant rich Matcha and are just sweet enough to keep you from reaching from something you shouldn't!
3 tablespoons coconut oil
1 tablespoon of Moss Matcha powder
3 tablespoons coconut butter
2 cups of medjool dates
1 cup of raw almonds
1 cup raw cashews
2 cups of desiccated coconut
First, line a biscuit tin with parchment paper. Then, gently melt in a saucepan, the coconut oil and butter then allow to cool. Get your blender, add the melted mixture and the dates and whizz until just combined.
In a large bowl combine your dry ingredients then in batches add this to the blender until you have a dough. ( Leave enough Matcha to sprinkle over your bars at the end ). Tip the mixture into your prepared tin and flatten. Refrigerate for a couple of hours then slice. These will keep in the fridge for a couple of weeks.......irrelevant really as they will be gone on a few days!
