GRILLED SALMON & AVOCADO SALSA

This is a family favourite. Simple, nutritious and delicious.

Ingredients: 4 salmon fillets
1 tbsp good quality olive oil
1 tsp chilli powder
1 tsp paprika
2 cloves crushed garlic
1 tsp organic honey
1/2 tsp soy sauce
Salt & pepper to taste
Salsa: Two large tomatoes chopped 
1 ripe avocado chopped
1/4 red onion chopped
1 corn on the cob grilled - tinned works but grilled gives it an extra dimension!
A good handful of chopped Coriander
2 tbs good olive oil
1tbs white balsamic
salt & pepper to taste
Instructions: Leaving the salmon to one side, combine all of the marinade ingredients together. Bear in mind the longer you leave it the more delicious it becomes. But if you are short on time no need to marinade simple rub the mixture generously over each salmon fillet. I prefer skinless salmon but it's a personal preference. Once this is done, place the salmon onto a hot griddle and cook for approximatley 4 minutes on each side but this does vary depending on how thick your fillets are. You can also grill them in the oven.
Salsa: Combine all the salsa ingredients together, drizzle over the olive oil, white balsamic and salt and pepper, give it a good mix and you're ready to serve! It looks beautiful if you place the salmon on a dark platter and top with the salsa. This is also a lovely dish to serve to friends for an informal supper in the garden.
