Grilled Cauliflower steaks with Za'atar are a real crowd-pleaser for good reason. A firm favourite of mine, they’re delicious, filling, and offer a moreish savory flavor. Cauliflower is perhaps most flavoursome when grilled. Enjoy this with a big green salad and if there is a party of you serve with rice, Tahini and a mango salsa.
Ingredients: 1 whole Organic Cauliflower
2 tbsp Cumin
2 tbsp Sumac
2 tbsp Sesame Seeds
2 tbsp dried Oregano
2 Cloves of Garlic
1 Organic Lemon
Olive Oil, Salt & Pepper
Instructions: Start by lightly toasting the cumin seeds in a dry pan until they start to release a subtle aroma then grind them in a pestle and mortar to a fine powder. Add all the other ingredients plus a generous amount of pink Himalayan salt and freshly ground black pepper. The Za'atar is now ready. (It will keep in a clean jar or airtight container for up to a month.)
Next, cut your cauliflower into even slices ( 3/4" thick ) pop them into a bowl, add your Za'atar and a generous amount of olive oil and with your hands, coat the cauliflower evenly. Season with salt and pepper and place onto a baking tray.
Grill for approximately 8 minutes on each side, add a little squeeze of lemon and serve! This makes a delicious midweek quick and easy meal.
